Seasoning for Salmon (SCD,GFCF)

I am always leery of spice blends. I was glutened once by lemon pepper seasoning. This is my replacement for Old Bay seasoning. There's no bay leaves in it but it goes well with salmon. I've had success with it on broiled salmon and salmon patties (recipe for future post). The nice thing about making your own blend is that you can adjust it to your taste.

If you are avoiding seeds you can substitute celery flakes for the celery seed. I use Simply Organic spices but I cannot vouch whether they are SCD legal or not.

Vegetable Seasoning (SCD, GFCF)

Our food dehydrator has been a wonderful kitchen tool. I'm beginning to experiment with using dehydrated vegetables as seasoning. My husband thinly chopped a batch of carrots and celery and dried them at 135 degrees until crisp (about 14 hours). I used an electric coffee grinder and ground them, a little at a time, into a fine powder with small bits. I combined equal parts of carrots and celery and used them as a seasoning in a cracker recipe. The results were great. In the future I'm hoping to try out different veggies, like spinach. Plus, we have to hide all veggies in our son's food and this is a great way to do it. If you do not have a dehydrator but would like to try this, Honeyville sells cans of freeze dried veggies. I have not tried theirs but it would probably be the same. You can purchase almond flour from them as well.

Chili Powder (SCD)

Many spice and seasoning blends can have starches or other ingredients for anti-caking that are not listed on the label. Making your own spice blends from individual spices is easy. It is also safer if you have sensitivities to some spices or starches. Our son loves the flavor of chili powder, but has a garlic sensitivity, so this blend was made for him.

6 TBSP Paprika
3 TBSP Cumin
2-3 TBSP Oregano, dried,crushed fine
1 TBSP. Coriander, dried
1 teas. Cayenne
1 teas. White Pepper

Combine in a shaker with an airtight lid.
